Live-Fire Grills
Real wood or charcoal fire, not a burner. These grills cook on an actual flame beneath a solid steel cooktop — the flavor gas can't fake, with heat zones hot enough to sear and gentle enough to keep food warm, all at once.
Live Fire vs. Gas: What's Actually Different
- Heat. A gas burner tops out around 500–600°F. A live wood or charcoal fire under one of these cooktops hits 1,000°F+ at the center — the kind of sear a steakhouse gets, not a backyard burner.
- Multiple temperatures, one surface, at the same time. Gas grills give you distinct burner zones you switch between. Here, the fire itself creates a natural gradient across one flat cooktop — searing hot at the center, cooking heat mid-ring, gentle warming at the rim — so a whole meal finishes together instead of in shifts.
- Flavor. This is wood or charcoal smoke actually touching your food, not gas heat with a box of wood chips bolted on to approximate it.
- Versatility. Pull the cooktop off and most of these convert straight into a fire pit. A gas grill is just a gas grill.
- The honest trade-off. Gas is instant-on convenience — flip a switch, cook in five minutes. A live fire takes a few extra minutes to build and needs tending while you cook. That's the cost of the flavor and heat you're getting; if convenience matters more to you than either of those, a live-fire grill isn't the right fit.
